Daily Meal Plan for the Picky Mom

My blog has always been a way to offer me MAJOR ACCOUNTABILITY so I’ve decided to start keeping myself more accountable for what I eat! I need to eat…a lot healthier. I need to make more creative and better meals that my daughter will eat too. So here’s the new plan, I’m going to go through my day/week, and blog the best recipes I’ve come up with! I made all my food in the morning this morning so it would be ready when I’m ready to eat. This way I won’t be tempted to grab a random snack. I don’t know if I’ll eat these same meals all week long, but this is a great starting point! Here’s the ideas that I came up with, and when I logged them into my Fitbit it told me I was eating 943 calories! So not a bad start!

Cream Cheese and English Muffin:

For breakfast I started my day out with a 50 calorie apple cinnamon rice cake, and half an English muffin with whipped cream cheese and some strawberry slices.

Sandwich Pinwheels:

This next dish is a turkey deli meat wrap with pepper jack cheese. I rolled it all up and put it in the air fryer for 3 minutes. After it cooled I sliced it up like sushi and stuck it in a container for lunch! I am also having a bag of pickles (hint the pickles go great with the pinwheels), and another rice cake like I had for breakfast!

English Muffin Pizza:

The next half of my English muffin is being devoted to an English muffin cheese pizza. I made this dish in the air fryer as well, some putting it in for 3 minutes to heat it up, putting my topping on (sauce and cheese, and garlic) and then cooking it in the air fryer for another 3 minutes. With this I’m also having a blueberry greek yogurt, 1/3 a cup of cottage cheese, and the rest of my pinwheels from lunch.
